Madeleine, oh madeleine, how yummy you are...









Pretty little madeleines, oh why oh why do you stick to the pan? I carefully buttered and floured your sweet little cradles, but you did not want to leave...


Tara of Smells Like Home chose Traditional Madeleines for TWD this week. A nice treat! When I see their pretty shapes for sale, beautifully packaged, I always wonder if buyers are disappointed in the taste, despite being so very darling, even when stale. Special the same day they are baked, mediocre otherwise.


Dorie's recipe was simple and I made no alterations. I piped the batter into the molds right after mixing (aren't plastic bags the best?). Popped in the fridge for 4 1/2 hours--but still, no bump! The mini-madeleines were the ones that really got stuck, so I did what anyone would do--I ate what I pried out of the pan. My pans must be smallish--I got 12 regular sized and 14 miniature shells out of what was supposed to make an even dozen.


Loved the way the batter made the house smell, and loved these cakey little treats. I'm remembering a savory madeleine version somewhere--have to find it before my next round of houseguests arrive!

Oh, sorry you had so much trouble getting the little devils out of the pans. Mine thought about sticking too, but I just whacked them out!! Would love to see the pix of the minis.

I didn't make the madeleines this week (no pan) but I have an issue with sticking baked goods. so, I feel your pain. Glad they tasted good enough to scrape out.

I agree with the lack of bumps and the sticking problem, despite the taste was good! It's not your fault! I had more luck with a French recipe.

I too ended up with way more than she said we would get with the recipe. I think that always happens to me though!

I'm sorry to hear about your sticking problem...the silver lining to this situation - more madeleines for you to enjoy! :) I'm glad that you liked these treats.

BTW, to answer your Q, I do like Julia's version slightly better as I like the texture better. Still, this is a very good recipe!

My first ever Madeleines had stuck to the pans as well, so this time I didn't go easy on the butter and flour and it paid off! At least they were delicious, right? :)

What a great tip about piping them into the pan. Bummer they wouldn't come out but its all good if they taste great right? ;)

I made blueberry muffins this time instead of the madeleines but after reading everyone's entry I wish I had of splurged and bought myself a pan. Sorry your's stuck, but you make them sound very delicious nonetheless!

Love the picture! I baked the madeleines in a silicone pan. No sticking problem. I'm sorry yours stuck to the pan.

I'm sorry your madelines stuck! I've made hundreds of them, and the trick really is to knock them out as soon as you take them out of the oven. I hope that works for you next time.

Sorry to hear they got stuck. Mine were tricky to pry out as well, though I blamed my non-standard pan.

I have been lured into purchasing madeleines because they are so pretty, but they are never good. Now that I make them and know how good they are fresh, I never fall for the sweet little shell-shaped cakes sitting in the big jar at the coffee shop!
