Creampuffs are a silly dessert. They are simple to make, and make great oven-window watching.
Dorie's recipe made a LOT of puffed dough!

The pastry doesn't taste particularly good. It doesn't taste bad, either. It is just a medium for the filling...
the filling makes the difference.
We don't do mint very well around here, so pistachio pastry cream was my choice--and bittersweet ganache poured over the top. To do this, I stirred 2 tablespoons of pistachio frangipane into vanilla pastry cream. That, my friends, is fabulously delicious.
Since there were no random neighbors around to force dessert upon, my family of three settled with the eating little puffs and eclair shapes. It was good, but honestly, the choux was really just an impediment to the pastry cream.
In the end, although I made it, I chucked the big wheel. I feel bad about that. Wasteful. But it was just added calories where none were required.

Thanks to Caroline of A Consuming Passion for choosing Peppermint Cream Puff Ring for this week's TWD pick. So I ditched the ring, and the peppermint cream... It was fun to make the puffs--just not that fabulous to eat them!

I can't wait to see the pictures. And I agree, the puffs are only the medium for the filling, the bigger the more filling :-). Pistachio pastry cream sounds divine.

do post some pics when you can...I'd love to see them! I agree with your theouries - it's the filling that matters!
Oh, pistachio pastry cream? Sounds fabulous, I have to see those puffs! :)
Sounds really interesting with the pistachios...everyone is so creative here!

sounds delicious! Can't wait to see pictures!
Cream...What's not to like! ;)
The cream more than made up for the pastry;) I cant wait to see pics!
I think the puffs are much nicer than the big wheel. Love the sound of the pistachios!
Pistachios!! What a great idea!
Oh pistachio cream sounds delicious! I am going to have to try some of the pistachio frangipane! Great job!
Pistachio cream - delicious idea! And, I totally agree, cream puffs are just cream delivery devices! :)
oh wow, those three plates look mouth watering! the mini puffs and eclairs look great, sorry you wasted the ring :(
Ooh, pistachio. YUM. BTW, I chucked the ring, too. It was just too much.

Pistachio.
Pastry.
Cream.
Why didn't *I* think of that *before* I bought the mint?!?
I couldn't agree with you more!!!!! Fun to make, not so fun to eat! We're on the exact same page with this one. Nonetheless, your puffs look gorgeous!
I feel the same about choux paste. It doesn't thrill me-however the filling and glaze-that's another story..
Mmmmm. I've never had pistachio pastry cream but it sounds delicious. I agree that the pastry is not that tasty but it does make a fabulous "container" for all sorts of sweet goodness.
Mmmm. Pistachio and chocolate. They look fabulous!
I'm sorry you didn't like the pastry. Your cream puffs look wonderful, and the pistachio cream was a great, great idea. Sounds delicious!
Your cream puffs and eclairs look perfect, and I agree with you they really are simple to make. I'm looking forward to having another go, and hopefully with better results!
