Carpal Tunnel Syndrome -- one of my many maladies. I knit, I type, I scratch (oh hives, will you ever go away?!!), I handwrite many letters in loopy cursive. Every night I wear a hand brace to bed, every morning I have an immovable claw.
To ready myself for houseguests, on a lark last year I hand -rolled lasagne noodles. For an entire week afterwards I dropped things. Like hot coffee and knives. At the same time. On my foot.
Poking around Sur la Table after my lasagne noodle fiasco, I found an erroneously priced KitchenAid pasta roller attachment. REALLY underpriced. Significantly wrong. Practically FREE! No fool--I plunked my money down. Isn’t it great when you have something you’ve wanted fall into your lap? I am filled with smug satisfaction.
Then the March Daring Bakers challenge was announced. March’s challenge was ‘hand –rolled’ noodles. I moaned and gnashed my teeth. (Hello TMJ! I know you’ve been lurking around just waiting for your invitation …).
.
But, as it so happens, machine-rolled noodles would do. I know—I cleared it with those in charge. Thank goodness. ‘Torture,’ as it turns out, is not necessarily synonymous with ‘daring’.
The buzz of my mixer rolling out a green forest of lasagne noodles was a symphony. In no time at all my dining room chairs were reupholstered in bright spinach green pasta lengths. No photo, but a beautiful sight indeed.
.
Combined with béchamel sauce and sautéed mushrooms, the slippery green noodles made a tasty lasagne treat that we all enjoyed. Best of all, instead of slurping lasagne from a bowl, my hands were able to manage utensils with aplomb.

Check out the Daring Baker’s blog roll to see more spinach lasagne. And extra credit and hand braces go to those making pasta by hand!

The March 2009 challenge is hosted by Mary of Beans and Caviar, Melinda of Melbourne Larder and Enza of Io Da Grande. They have chosen Lasagne of Emilia-Romagna from The Splendid Table by Lynne Rossetto Kasper as the challenge.
Leftover noodles tasted great with pureed butternut squash and sauteed sausage.

Thank goodness for technoolgy - no one wants an injury! It lloks delicious.
Oh wow, that's awesome that you caught Sur La Table either making a mistake or having an incredibly marked down sale! I LOVE when that happens, especially since it's so rare! Now maybe I can find a good Canon macro lens for less than half the price and capitalize on their mistake, which they have to honor! LOL
Ok, i'm babbling here. Your lasagne looks beautiful, and I love that velvety butternut squash on the leftover noodles!
Hope your hand feels better..carpal tunnel is a beetch!
Hooray for cheap ass pasta roller attachment! Your lasagna looks great!
I am so jealous. I priced the KA pasta attachment but it was out of my range, so I hand rolled and I definitely felt the pain!
Good luck to you about the super low price. And sorry to hear about the carpel problem. Your completed dish looks fabulous and will inspire many others to do this recipe. Bravo on a great effort
Bless your heart (and hands) in achieving success with this challenge. I am suffering repercussions as a result of hand-rolling the pasta but am still glad I at least tried it (but will never do it again). I am tickled to read about the KitchenAid pasta attachment and am on the hunt for one. I also like what you did with the leftovers, it looks scrumptiously delicious.
Your lasagna looks awesome! I'm so thinking about getting the KA pasta attachment. It looks like it worked well.
I have one of those braces around here, somewhere, and sympathise. I skipped the hand rolling too, and we both had beautiful noodles.
I was laughing as I read the start of your post as that was me after completing this month's challenge! Geez, a week later my arms still feel it. I definiately used muscles that never get used on a regular basis! I watched with amazement when I watched a video of the KA attachment on the Williams Sonoma site. Your lasagne looks wonderful and nice idea with the leftover noodles!
Oh god, I feel your pain. I've never had carpal tunnel, but I did have severe tendonitis in both hands and wrists and had to wear horrid itchy braces. I remember slurping dinner *shudder*
I'm so glad that you managed this lasagne without any pain, and it looks really, really good!
Great idea for the leftovers because I have quite a bit of the pasta left. I enjoyed your post. :) I feel like I have "man-arms" after rolling the noodles out. Great job on yours!
Great job on your lasagne! It looks fabulous!
congrats on the challenge, it looks great! i wish i had a pasta machine, it would've made things much easier and prettier
Hooray for the kitchenaid!!
Mushrooms sound like a yummy addition!
Congratulations on your magnificent find! You can feel smug every time you pull that handy gadget out and whip up fresh pasta while resting your wrist!
